Tilapia -- pan fried

Ingredients ...

[1] Tilapia fillet, 2.5 lbs, for 4 persons.
[2] cooking oil
[3] black pepper
[4] salt
[5] corn starch or flour

Directions ...

[a]  wash [1], dry on paper towel, each fillet cut into 3~4 pieces. ( not less than 2.5 inches in length )
[b] rub a thin layer of [5] on both sides.  the purpose is to prevent the fish from sticking to the pan.  it also helps to hold the fish meat together, easier when you flip them.
[c]  sprinkle [3] [4] on both sides.  black pepper goes very well with pan fried fish.
[d]  add [2] to pan, medium heat.
[e]  when the oil is hot enough, put in the fish.  after the meat changes "color" about 2/3 from the bottom, flip the fish.
[f]  when the meat color becomes consistent, take out.  can put a paper towel on the plate, to absorb the excessive oil.

Notes ...

-- in [e] and [f], shake the pan a little, so the fish wont stick to the pan.  but make sure the oil do not spill out.  this is a dangerous move.  or you can use the spatula to "move" them a little.
-- if too little oil, the fish tends to stick on the pan and the meat will become dry. 
-- if not sticking to the pan, you can leave the fish there a bit longer, the outside will become a bit crispy and brownish in color.  make the dish look, smell and taste better.
