Ingredients ...
[1] Tilapia fillet, 2.5 lbs, for 4 persons.
[2] cooking oil
[3] soy sauce, 2 table spoons.
[4] water, 1/3 of a cup.
[5] corn starch or flour.
[6] hot pepper sauce, 1 teaspoons.
[7] ginger, thinly sliced. 4 table spoons.
[8] cooking wine, 2 table spoon2.
[9] sugar, 2 teaspoons.
Directions ...
[a] wash [1], dry on paper towel. no need to cut, but cut into halves is fine too.
[b]
rub a thin layer of [5] on both sides. the purpose is to prevent the
fish from sticking to the pan. it also helps to hold the fish meat
together, easier when you flip them.
[c] [3] + [4] + [6] + [8] + [9] ==> [A]
[d] add [2] to pan, medium heat.
[e] when the oil is hot enough, add [7], stir for 15 seconds.
[f] + [1]. one minute for the first side, flip the fish, cook for another 45 seconds.
[g] + [A], bring to boil, lower the heat, then let it simmer for another 3~5 minutes. ready to eat.
Notes ...

in [e] and [f], shake the pan a little, so the fish wont stick to the
pan. but make sure the oil do not spill out. this is a dangerous
move. or you can use the spatula to "move" them a little.
-- if too little oil, the fish tends to stick on the pan and the meat will become dry.
-- this dish should have some plenty of sauce, the sauce is a bit on the sweet side.
