[1] pork butt 2 lbs, cut into cubes about 1.1/4" in size
[2] cooking oil
[3] ginger 10 large pieces
[4] cooking wine, 1/4 cup
[5] sugar, 1 tea spoon
[6] soy sauce, 4 table spoons
[7] garlic 10 cloves
[8] puff totu (optional)
[9] water ... about 1.5 cups
[a] [2] + [3] ... in pot, medium heat for 30 seconds.
[b] + [1], till the meat surface changes color.
[c] + [6] + [4] + [5] + [9], bring to boil, simmer in low heat for 1 hour.
[d] + [7] + [8], simmer for another 10 minutes.
Notes ...
-- tastes better if the meat is not too lean.
-- don't cook the garlic for too long, it may disappear :-)
-- when add water, make sure it does not reach the top of the meat in [c], cover about 3/4 of the meat is enough
-- [6] depends on the type of soy sauce, some are saltier than the other. starts with 4 table spoons. then add more if needed.
