salmon head tofu soup

To make enough for 4 people.

Ingredients:

[1] salmon head (~1.5lbs) cut into halves, clean, wash, dry with paper towel
[2] cooking oil
[3] salt
[4] pepper
[5] cooking wine
[6] cilantro, cut into 2 inches in length
[7] tofu, a box, cut into medium cubes
[8] ginger 7 slices
[9] green leaf lettuce, half
[10] hot water ==> 700cc
[11] lemon juice (half a lemon)
[12] sugar
[13] japanese miso soup fish powder

Directions:

[a]  [1] + [3] + [5] ==> [A] for 25 minutes
[b]  dry [A] with paper towel ==> [B]
[c]  [2] + [8] in a pan, medium high heat
[d]  + [B] ==> brown the salmon head, ski side down for 5 minutes
[e]  flip the fish head, now the skin side is facing up
[f]   + [10], medium high heat, boil for 10 minutes (soup becomes milky)
[g]  + [11] + [5] + [7] ==> boil for 5 minutes
[h]  +[9] + [6] ==> boil for 2 minutes
[i]   turn off heat
[j]   add [3] + [12] + [4] + [13] to taste
