miso salmon

Ingredients ... 

[1] salmon steak, 0.7lbs


[2] miso paste, select the not-too-salty one, one big scoop of a tbl spoon.


[3] scallion, 3 stalks, cut into 2 inches in length

[4] cooking wine -- 45cc
[5] water -- 55 cc
[6] ginger -- 10 big pics, about 1.1/2 mm thick


[7] sugar -- 2.1/2 tea spoons

Directions ...

[a] mix [2]+[3]+[4]+[5]+[6]+[7] evenly in a container

[b] dip in the salmon, make sure the sauce almost covers the salmon
[c] put it aside for 4 hours, or overnight.
[d] preheat the toaster oven
[e] bake with 350 degrees for ~30 minutes.  since the top part is not in the sauce, i usually turn over the fish before putting it in the oven.
[f]  half way thru, i sometimes use a long spoon to scoop up some sauce and put it on top of the fish, just so it will not get too dry
[g] dont over cook the fish, see note 3 below.

Notes ...

  1. garlic is not used, included in the pics just to show the relative sizes
  2. the amount is good for 3 people
  3. baking time might differ, check a few times along the way with a chopstick.  if you see the meat change color, that means it is done.  try not to overcook it.
  4. baking time for regular oven will be longer than 30 minutes.
