cocido

ingredients:
[1] 1 chicken
[2] 1/2 kg of lean pork -- cut into chunks
[3] 1 tsp pepper corn
[4] 3 pcs tomatoes (quartered)
[5] 3 stalks of leeks ---- cut into 2" pieces
[6] 3 small or 1 big onions (quarter)
[10] 3 pcs of Spanish chorizo( chorizo de Bilbao)
#sausage(from spain, not mexico)
[11] 1/4 kg of potatoes
[12] 1 small cabbage
[13] 1 chinese bok choy or taiwanese cabbage
[14] 2 pcs carrots
[15] 1/4 kg of string beans (baguio beans)

procedures:

[a] boil water + [1][2][3][4][5][6][10]
# when tender, remove and set aside ==>[A]
# might need to take chicken out sooner, then chorizo
[b] +[11][12][13][14][15]
# might need to take out the vege early, dont overcook them.
[c] +[B] below

spanish tomato sauce ==>[B]

ingredents:

[1] 1/4 cup of oliver oil
[2] 1 whole bulb of garlic -- crushed
[3] 4 small onions -- chopped
[4] 1 cup of tomato -- chopped
[5] 2 small can or 1 medium can of tomato sauce
[6] 1 cup of broth
[7] salt and pepper to taste
[8] 200gms of bacon slab, cut in chunks

procedures

[a] saute + [1]+[8] brown the bacon slightly
#remove, put aside with meat[A;above]
[b] +[2][3][4]
[c] +[5] -- simmer
[d] +[6]+[7]
[e] add the meat and cook slowly + [A:above] ==>[B]
