To make enough for 4~6 people.
Ingredients:
[1] beef short ribs (2~2.5 lbs, take out as much fat as possible)
[2] scallion (6, cut into 2.5 inches long pieces)
[3] ginger (15 1-mm thin big slices)
[4] star anise[ba-jiao] (2 pieces)
[5] Chinese pepper[hua-jiao] (1/2 tea spoon)
[6] tomato (3 medium size, cut into 1 cubic inch cubes)
[7] soy sauce (1/5 cup)
[8] crushed hot pepper (1/8 tea spoon)
[9] cooking wine (1/2 cup)
[10] crystal sugar[bing-tang] (1 cubic cm chunk)
Directions:
[a] place [2]+[3]+[6]+[1]+[4]+[7]+[9]+[5]+[8] evenly in pot, in this order.
[b] medium heat, bring to boil.
[c] lower heat, simmer for an hour.
[d] take out bones.
[e] +[10].
[f] continue to simmer for another hour or until the meat becomes tender.
[g] turn off heat, let it cool over night. (either in the fridge when cold or in the car if winter).
[h] take out the frozen fat on the top in the next morning.
[i] bon appetit after reheat.
Notes:
[1] when simmering, stir occasionally to make sure the meat is completely immersed in the sauce.
[2] do NOT add water.
